CHESHIRE: There’s a new head chef at The Chester Grosvenor

Matthew Ramsdale has been appointed Head Chef at The Chester Grosvenor’s La Brasserie restaurant, replacing Gareth Jones.

 

Following two and a half years as Sous Chef at Simon Radley’s La Brasserie restaurant, Matt Ramsdale has been appointed Head Chef of the two AA rosette establishment.

 

Cited as a key driver of the La Brasserie concept, standards and innovation, Matt is set to continue developing the menu to incorporate innovative and seasonal dishes, utilising an abundance of high-quality, carefully selected suppliers.

 

Matt Ramsdale, says: “I’m very fortunate to have a lot of backing and support from Simon Radley and the hotel to explore and experiment with food. My plans for the future are to keep the standards as high as expected at La Brasserie, ensuring the menu is as fresh and seasonal as possible, using the best possible ingredients from our suppliers”.

 

We have a new ‘Casual Dining’ menu launching in the coming weeks; some beautiful classics paired with a couple of more modern, brasserie style plates. I’m also working on some new dishes to keep the A La Carte menu interesting and exciting.”

 

The relaunched menu includes the likes of mackerel fillet with Romesco sauce stuffed sweetbite pepper, rocket and hazelnut pesto, fresh tomatoes, almonds, rocket and finished with a hazelnut and parmesan crisp.

 

Being a firm favourite on Chester’s dining scene for over 20 years, The Chester Grosvenor’s ‘La Brasserie’ sits at the heart of the city-centre and acts as an unrivalled hot spot for people-watching, a perfect retreat in the hustle and bustle of the city, complete with glamourous Champagne bar.

 

Additional new appointments at La Brasserie include Joshua Robbins who has risen through the ranks from apprentice to Sous Chef and Daniel Wynne as Junior Sous Chef.

 

The hotel has been the City of Chester’s ‘premier place to stay’ since 1865. Simon Radley at The Chester Grosvenor is proud to hold a Michelin Star since 1990 and remains the only restaurant in Chester and Cheshire to do so. VIVA can’t wait to sample the new menu!
