Mr Cooper’s new head chef puts some Manc into the menu

It’s always good to recognise home grown talent and now Mr Cooper’s, The Midland Hotel’s modern British Brasserie, has appointed Rebecca Richardson who is born and bred in Longsight.

 

Rebecca said: “The Midland Hotel is such an iconic destination and I’ve always been a fan of Mr Cooper’s. When the opportunity presented itself, I jumped at the chance to join the team and have spent a lot of time working on new menus, ensuring they remain true to what the restaurant is all about, while offering customers the best in British produce and flavours.”

 

She joins the AA Rosette’s eatery from Marriott Hotel & Country Club in Worsley and has created a new A La Carte menu with the focus on British produce.

 

 

And if you’re on a budget, Rebecca has also created a pre-theatre set menu so you can try out her delicious sounding dishes with two courses at an affordable £16 or three for £20.

 

Her new A La Carte menu launches this week and includes starters such as slow cooked pork belly, celeriac slaw & black pudding apple puree, or there’s truffled wild mushrooms with grilled garlic rosemary bread and soft hen’s egg.

 

The mains offer a wide range of dishes, really utilising the restaurant’s in-house butcher, where the team prepare every cut of meat served in the restaurant. Dishes include Cumbrian lamb rump, English minted peas with squash fondant potato. There’s also braised beef cheek that’s served with spring greens and bone marrow crumb, or minted pea risotto with smoked garlic and crispy onions.

 

 

 

 

 

 

 

Desserts provide the perfect mix of palate cleansers and sweet treats, including chocolate peanut butter cheesecake with crunchy honeycomb with vanilla ice cream. There’s a rather sweet slow cooked pineapple with coconut crumble and grass ice cream. However, the Allotment ‘where it all began’ has got to be our preferred choice of dessert: Chocolate soil, choc cherry kirsch mouse, marzipan carrots, strawberry sorbet, baby toffee apples and micro basil mint bring this sweet treat together.
